Healthy Muesli Recipe – Quick And Easy To Make At Home

Sick of store-bought high-sugar breakfast cereals?

Have you tried putting together your own brand of muesli?  By making your own you have complete control over what actually goes in your recipe (and also, your mouth!).   Many store-bought mueslis are full of sugar – check the labels on your current brand, as some have up to 25g sugar per 100g.  Which effectively means that they are ¼ sugar!  Which is far too much…

Here is a really quick and filling recipe that you can use, that will get you off to a far better start. This version has plenty of fibre, healthy fats and nutrients (without the extra sugar) to help keep you fuller for longer.  Which means that chocolate vending machine in the office will be safe for a bit!

In my opinion, the macadamias are really what makes this muesli super-delicious.  But of course, you can add whichever combination of nuts or other ingredients that take your fancy.

  • 250g organic rolled oats
  • 100g shredded coconut
  • 80g raw pistachios
  • 100g raw macadamias
  • 100g raw hazelnuts
  • 100g pumpkin seeds (pepitas)
  • 1 teaspoon cinnamon

Whiz the nuts for a few seconds in a food processor or Thermomix – you just want them lightly chopped, not completely pulverized.  Then mix the other ingredients in, and store in an airtight container until ready to use.

You can either serve this raw over some natural Greek yoghurt, topped with a bit of chopped fresh fruit or berries and a little honey, or you can gently heat for a minute or two in a dry non-stick frypan with a dash of maple syrup and some sultanas, chopped dried apricots or dates added.

Delicious!
