Who gets sick of eating salads? I admit, I struggle with it too, and while soups or steamed vegies a great way to get your daily dose of the good stuff, occasionally I feel like something a bit different.

These easy vegie fritters are a simple way to bump up your vegetable intake for the day, and kids love them.

Ingredients (serves 4):

  • 1 cup wholemeal spelt flour (or equivalent gluten-free flour if you prefer)
  • 1/2 tsp baking powder
  • 1 egg (free range if possible)
  • 1 cup milk
  • 2 carrots, grated
  • 2 zucchini, grated
  • 1 cup corn kernels (fresh or frozen)
  • Olive oil, for frying
  • Salt (sea or Himalayan) and cracked pepper to taste

Method:

  1. Mix flour, egg and milk thoroughly in a bowl until smooth,
  2. Add vegetables
  3. Heat oil in frying pan over medium heat
  4. Fry batter in batches until golden and cooked through

Tip: If you are watching your weight, try omitting the flour and milk, and adding an extra egg or two.
