Easy Vegetable Fritters


Who gets sick of eating salads? I admit, I struggle with it too, and while soups or steamed vegies a great way to get your daily dose of the good stuff, occasionally I feel like something a bit different.

These easy vegie fritters are a simple way to bump up your vegetable intake for the day, and kids love them.

 

Ingredients (serves 4):
1/2 cup self-raising flour
1/2 cup plain flour
1 egg (free range if possible)
1 cup milk
2 carrots, grated
2 zucchini, grated
1 cup corn kernels (fresh or frozen)
Olive oil, for frying
Salt (sea or Himalayan) and cracked pepper to taste

 

Method:
1) Mix flour, egg and milk thoroughly in a bowl until smooth,
2) Add vegetables
3) Heat oil in frying pan over medium heat
4) Fry batter in batches until golden and cooked through

 

Tip: If you are watching your weight, or need a gluten- or dairy-free version, try omitting the flour and milk, and adding an extra egg or two.
