When it comes to eating well, it goes without saying that starting your day with a good breakfast makes common sense.
When I am working with patients in the clinic, I always ask them for some insight into what they typically eat for meals and snacks, and more often than not I find that people don’t eat enough vegies.
These cauliflower fritters are a simple (yet delicious) way to get some extra vegies into your day, as well as some protein to keep those mid-morning hunger pangs at bay.
Ingredients:
- 1 cup frozen cauliflower rice (find in the freezer section in supermarkets, or whiz up fresh cauli in a food processor and squeeze out any liquid)
- 1 tsp onion powder
- 1/4 cup grated cheese
- 1/4 cup wholemeal spelt flour (you could leave this out if you don’t have it, or prefer a gluten-free version)
- 2 eggs
- Side of mashed avocado and relish (optional)
- Salt & pepper to taste
- Olive oil, for frying
Directions:
- Fry in a little olive oil over medium heat until golden brown and cooked through.
