This quick and easy recipe makes a great change from a traditional salad, and is a tasty way of increasing your veg quota for the day.
4 large cos lettuce leaves
1 medium avocado
2 chicken breasts, cooked & shredded
6 grape tomatoes, quartered
½ red capsicum, diced
1 tsp lemon/lime juice
¼ tsp onion powder
¼ tsp garlic powder
1 Tbsp pumpkin seeds, to serve
Mash avocado flesh in a bowl until smooth. Add juice, garlic, onion and a pinch of salt, and combine.
Stir in chicken, tomatoes and bell pepper, and coat evenly.
Serve directly into lettuce leaves and sprinkle with pumpkin seeds.
